Something of a Challenge
Made some soup Saturday and it was not bad. It wasn’t first on my list of dinner possibilities, but I’ve been on a soup roll lately, and I got myself a sinus infection last week (think concrete poured into your nostrils) so my energy level was not ringin’ any bells. Halfway through a round of antibiotics now, which has — combined with soup every day and a bit of exercise — left me feeling this side of real fine. Physically, that is. Emotionally, things have been something of a challenge, and I’m workin’ on that, too.
Seems about this time each year I find myself a bit out of sorts. Could be the lack of sunlight, fewer walks in the woods for the cold, the long dark nights, not much fresh produce at the grocery store (good apples are scarce and rhubarb is nonexistent), the fact that more than half the people I know are sick, the issues out there in the world. You know. The ones none of us can fix in a day, or get our arms around, even. Things like healthcare, taxes, travel, the economy, a possible shortage of bananas, political happenings, credit card bills, etc. It’s a Lot. But now, seems it’s time for me to switch gears. Not vehicles, but gears.
My parents raised me well. They taught me to work hard, to be kind, to never ever give up. Remembering those things has gotten me through the rough spots. Through pregnancies, depressions, loneliness, financial struggles, the stretch when Mr. S and I lived apart for a while, illness, moving from there to here — all of it — and random moments of fear and despair along the way. We all have rough spots; we all have stretches of hopeless hours. Days, even. And sometimes we all have ‘em together.
Work hard, my friends.
Be kind. To everyone.
And never give up. Ever.
And in the meantime, get on out your cookbook and make yourself some soup.
Here’s one from a friend who visited when I was sick awhile back. She guaranteed it would bring me back and bring me back it did.
2 carrots, chopped
1 sweet potato, cubed
2 stalks of celery, roughly chopped
2 onions, sliced
1 cup parsley, finely chopped
1 cup of shiitake or your favorite mushrooms, fresh or dried
2 tomatoes, chopped
1 bulb of garlic (about 6-8 cloves), minced
1 inch of fresh ginger root
1 inch of fresh turmeric root
8 cups of water
red pepper flakes, optional
Place all the ingredients in a pot and bring to a gentle boil. Turn heat to low and simmer an hour or so. Strain and sip for a healing broth full up with minerals.
